PANCAKE DAY!!!!!! By far best day in February, except, of course, my birthday. Don’t even like Valentine’s day.

Banana Pancakes

You will need:

  • 120g Plain flour
  • 1tbsp Caster sugar
  • 2tsp Baking powder
  • 1/4tsp Salt
  • 1 Egg, beaten
  • 200ml Milk
  • 2tbsp Vegetable oil
  • 2 Mashed, ripe bananas

Method:

1. Mix together the flour, white sugar, baking powder and salt.

2. In a separate bowl, mix together the egg, milk, vegetable oil and bananas.

3. Mix the flour mixture into the banana mixture, the batter will probably be slightly lumpy. Mine was and its was fine.

3. Melt a lil butter in a frying pan and set over a low heat, plop about a tablespoon of batter onto the frying pan. Wait about 20-30 seconds. Then start trying to flop it over, TRYING is the main word here. If the spatula doesn’t go under it easily enough, wait a bit longer. Bake equally on both sides. Done!
