A weird one, it’s really eggy and doesn’t do what its supposed to do. Mine didn’t stay fluffy long and turned into an almost liquid state within 5 minutes. I didn’t mind them and neither did my sister but I’ve had better.

Pancake Souffle

  • 2 Egg yolk
  • 100ml Milk
  • 50g Plain flour
  • 1 1/2tbsp Melted butter
  • 1tbsp Caster sugar
  • Pinch of salt
  • 1tsp Vanilla extract
  • 3 Egg whites

Method:

1. Mix together the egg yolks and milk. Add the rest of the ingredients EXCEPT the egg whites.

2. Beat the egg whites with an electric mixer until peaks form, gently fold the egg with into the other stuff until JUST combined.

3. Melt a little butter in a frying pan and set over a low heat, plob about 1 tablespoon of batter onto the pan and cook gently until bubbles appear on top, then try and flip it over, if the spatula sticks the the soon-to-be-pancake then leave it for a couple seconds. At this time you really need to flip it. Cook evenly on both sides, done… Hopefully.
