Classic Christmas treat, easy to make and and even easier to eat…. unless you do what I did and accidentally bought brandy infused mince meat…. and only found out after eating half of one… Then they’re a little harder to eat. Lets just get on with it.
You will need:
- 140g plain flour
- 80g unsalted butter
- 50g icing sugar
- 2-3 egg yolks
- A jar of NON-BRANDY INFUSED minced meat
Method:
1. Make the pastry by mixing together the flour and butter using your fingertips. Then mix in the sugar and egg yolks. (if its too dry add a bit of milk)
2. Roll he pastry out on a heavily floured surface until about 2-3cm thick. Cut with a serrated (bumpy) round cookie cutter and place in a greased cake tray. Poke the bases with a fork. Preheat oven at gas mark 4/180*C/350*F.
3. Put teaspoons of filling in each one, choose the shape of the topping if you want one (I would recommend). I chose a star. Bake for 20-25 minutes or until look cooked. Done!
I love mince pies
