Apples are one of my go to ingredients with I am working out our Samhain menu. The apple is a symbol of life and immortality, and when you cut an apple in half you will find a five pointed star, or pentacle at its core. No wonder it’s foud in so many Samhain recipes

Ingredients:
- 3 medium apples (peeled, cored, thinly sliced)
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 240g cake flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 115g butter, softened
- 200g sugar
- 3 large eggs
- 3/4 cup apple schnapps (or apple juice, milk, water or a combination)
- Serving Suggestions: Whipped cream, ground cinnamon
Method:
- Preheat oven to Gas 4, 180 C, 350 F Grease a 9×13 pan
- Toss apple slices with spices and set aside

- Combine flour, baking powder, and salt with a whisk
- Cream together butter and sugar in a large bowl
- Add the eggs one at a time and mix after each one
- Add flour mixture alternately with apple schnapps
- Stir in the spiced apple slices
- Transfer batter to the greased pan
- Bake for 30 to 38 minutes
We couldn’t actually find apple schnapps without going out but we did find Berentzen Applecorn Snaps on next day delivery at Amazon. It tasted fantastic in the cake
