Cinnamon and Banana Cake

This is another recipe that uses old bananas that you most likely would just throw away, we have being using lots of spices recently and this recipe had cinnamon and nutmeg to give the bananas a festive taste.

ingredients

  • 125g of butter softened
  • 125g caster sugar
  • 2 large eggs
  • 125g of flour
  • 1/2 tsp of baking powder
  • 3 ripe bananas

For the cinnamon sugar

  • 25g granulated sugar
  • 25g light brown soft sugar
  • 1 tsp of ground cinnamon
  • a large pinch of ground nutmeg

Method

  1. Preheat the oven to gas mark six (400f) and grease a 2 pint loaf tin
  2. Mix all the ingredients for the cinnamon sugar together in a bowl and then set aside
  3. Cream the butter and castor sugar until light and fluffy
  4. Then add an egg and slowly mix in some of the flour repeat the process for the other egg
  5. Fold in the remaining flour with the baking powder and two mashed bananas
  6. Pour half the batter into the loaf tin and sprinkle with half of the cinnamon sugar
  7. Pour the rest of the batter into the tin and sprinkle with the rest of the sugar
  8. Half the remaining banana and place both halves on top of the batter
  9. Put into the oven and reduce the heat to gas3 (325f) bake for 60 to 65 minutes or until a knife comes out clean

It tasted really nice but there was a small problem while taking it out of the tin, the banana had sunk to the bottom, which made the bottom soggy so when we got it out the top half came but the bottom stayed in the tin. I think next time I’ll put the banana on in chunks or put it on half way through the cake cooking.
