I was really surprised by this, I had quite low expectations for this at first but it was actually quite good. Even my grandad didn’t mind it, and he doesn’t even like sweet potato!
You will need:
For the pastry:
- 780g Sweet potato, grated
- 1tbsp Plain flour
- 2tsp Olive oil
- 1tsp Salt
- 1/2 Pepper
For the filling:
- 150g Chedder/ Red lester, grated
- 150g Soft cheese
- 4 eggs, beaten
- 1tsp Parsley
- 1/2 tsp Oregano
- 1tsp Basil
- 1tsp Pepper
- 3 Bacon slices, cooked and roughly cut
- 1 Handful of baby spinach, chopped but still big pieces
Method:
1. Mix together all the pastry ingredients until everything is evenly distributed. Butter a large fluted flan dish, pre heat oven to gas mark 7/ 210*C/ 425*F. Press all the sweet potato in the flan dish, compact it well as to fit it all in. Bake for 25 minutes until slightly golden. The edges may blacken, this is fine :).
2. Leave the pastry case to cool, turn the oven to gas mark 4. Mix together all the filling ingredients. Put it all in the sweet potato case and bake for 25-30 minutes or until the filling is cooked. Leave to cool for a min, and Done!!
