The original recipe is pretty boring and bland so I made it better. Theyre dead easy and the hardest is flipping them while theyre cooking. They’re like pancakes, but nothing like pancakes, the only similarity is the fact theyre cooked in a frying pan, so basically theyre nothing like pancakes at all really.

Sweet Potato Cakes

You’ll need:

  • 1 Large sweet potato, peeled and grated
  • 1/2 Onion, chopped finely/grated (dont recommend grating an onion if you like the skin on your fingers)
  • 2 Eggs, beaten
  • 40g Grated cheese
  • 3tsp Plain flour
  • Salt and Pepper to taste
  • Olive oil

Method:

  1. Mix all the ingredients together in a large bowl until well combined.
  2. Heat some oil in a frying pan until a little piece of grated potato immediately starts sizzling when dropped in, get a large spoon full of the mixture and plop it into the frying pan, shape it with a spatula and cook for about 30 seconds, and flip. Cooking time depends on the size of the potato cake you put in the frying pan, use common sense please. Cook until done on both size and eat. Nom nom.
