Today we celebrated Litha which is the summer solstices. We made loads of new food this is the first time I have used zest in anything and it turned out to be nice the original idea was to make a cake but we decided to make it into muffins.
Ingredients
- 125g of soft butter
- 2 eggs
- 180g self raising flour
- 180g demerara sugar
- 1 tbsp lemon juice
- the zest of 1 lemon
- 110 grams of crushed pecans
Method
- cream the butter and sugar together until well mixed
- add the eggs lemon juice and zest and mix again
- add the flour then fold it in to the mix
- put in the muffin cases and put in the oven at gas mark 4/180°c/350°f then bake till golden brown
