Lemon And Pecan Litha Muffins

Today we celebrated Litha which is the summer solstices. We made loads of new food this is the first time I have used zest in anything and it turned out to be nice the original idea was to make a cake but we decided to make it into muffins.

Ingredients

  1. 125g of soft butter
  2. 2 eggs
  3. 180g self raising flour
  4. 180g demerara sugar
  5. 1 tbsp lemon juice
  6. the zest of 1 lemon
  7. 110 grams of crushed pecans

Method

  1. cream the butter and sugar together until well mixed
  2. add the eggs lemon juice and zest and mix again
  3. add the flour then fold it in to the mix
  4. put in the muffin cases and put in the oven at gas mark 4/180°c/350°f then bake till golden brown
