Scotch Pancakes (Drop Scones)

Pancakes are one of those things that the children, and my husband, never seem to tire of. Quick, simple and so tasty. A lot of people make these on a griddle but we don’t have one so I just used the frying pan, they came out fine

I was surprised to find out that pancakes ave been around for a very long time. Researchers have found pancakes in the stomach of Otzi the Iceman, human remains dating back 5,300 years. They are thought to have been around in the Stone Age, 30,000 years ago

Ingredients:

  • 225g Self Raising Flour
  • Pinch of Salt
  • 50g Caster Sugar
  • 2 eggs, beaten with enough milk to make 300ml

Method:

Sift together the flour, salt & caster sugar into a bowl. Mix together the milk and eggs in a separate bowl then pour the milk mixture into the flour

Place a tablespoon of the batter into the pan, smooth the top with the back of the spoon. Let the batter cook until bubbles start to appear on the surface, about 1-2 minutes then flip the pancake over using a palette knife, a fish slice also works well. Continue cooking until the pancakes are golden brown and cooked both sides. Around 3-4 minutes per pancake

Perfect with so many toppings, we had some with cinnamon honey and then finished off with sugar and lemon
