Roasted Sausages And Mediterranean Vegetables With Garlic Toast

Both Nan and Grandad have arthritis, nanny had read that a Mediterranean diet can help sooth arthritis, so she asked me to find a recipe that we could try, to see if they could partially change over to a Mediterranean diet.

It was the first time that we had tasted a courgette and when I first saw it I wondered if it was a strange banana or an under ripe cucumber, I was baffled by this strange vegetable until nanny told me what it was.

This was my first time cooking a full meal ,supposedly, Abbie helped me with it( well, she did most of it actually, at least I learned some things for next time) , she had the idea of adding croutons to the recipe and it made such a difference

Ingredients

8 pork sausages cut into quarters
2 red onions cut into wedges
1 courgette, chopped
1 red pepper deseeded and chopped
400g tin chopped tomatoes
250ml vegetable stock
2 tbsp fresh basil plus extra for garnish
Salt and freshly ground black pepper
6 slices French stick
2 tbsp low fat cream cheese with herbs
1/2 tbsp butter
2 garlic cloves, crushed

Method

  1. First Pre-heat the oven to gas mark 6 200°C/400°F . Place the chopped onion, courgette and pepper in a roasting tin for 20-25 minutes.
  2. Mix the tomatoes and vegetable stock then turn the temperature down to gas mark 4 180°C/350°F/. Then add the sausages to the roasting tin, pour over the tomatoes and vegetable stock, add the basil and seasoning. Cook for another 20-25 minutes. ( My grandad would have preferred the sausages to be pre-cooked)
  3. When the sausages are nearly cooked mix the butter , cheese and garlic together until creamy. Toast the French stick lightly on each side(we didn’t have a French stick so we used a bread roll) , spread with the cheese and grill for a further minute or so.
  4. Then ,if you want , make the croutons
