Cheesy Smoked Salmon With Pasta

Anybody who knows me would tell you that I love a bargain. Whenever I’m in a supermarket I always look for the ‘yellow stickers’ to reduce my spending. So when I went into our local Fulton’s and saw smoked salmon for 60p I had to get a pack. I searched online for recipe idea’s and mixed a couple together and came up with the cheesy smoked salmon with pasta.

I only used five ingredients to make this, quick and easy, perfect for a light lunch. This amount served two.

Cheesy Smoked Salmon With Pasta

Ingredients

  • 250g pasta of our choice (dry weight)
  • 150g soft cheese
  • squeeze lemon juice
  • 100g smoked salmon
  • Herbs of your choice – chives would be best

Method

  1. Cook the pasta according to the pack instructions. Once cooked drain it but reserve some of the water, and tip the pasta back into the pan. Add the soft cheese, lemon juice and smoked salmon with some pepper and mix well. Add a little of the pasta water to help form a creamy sauce, and heat through.
  2. Add most of the herbs, stir, and divide the pasta mixture between two plates. Serve with the remaining herbs scattered on top.

I do think chives would have been the best herb for this dish as it goes perfectly with both the cheese and salmon. As I’d ran out, I think one of the children used it up and forgot to tell me, I used mixed herbs and a little rosemary on the top, rosemary probably isn’t to most peoples taste, but I like rosemary!
