A bread made with buttermilk that is sweetened with honey and golden syrup with plenty of dried fruits and nuts. Simple to make and most of the ingredients are measured with spoons

Samhain Buttermilk Bread

Ingredients
480 g strong white flour
500 ml buttermilk
1 teaspoon baking soda
4 dessert spoons honey
3 dessert spoons golden syrup
2 handfuls mixed dried fruit
1 handful mixed peel
3 pieces of stem ginger, roughly chopped (the kind you get in syrup)
chopped walnuts and rich brown sugar, for sprinkling
1/2 teaspoon salt

  • Put sieved flour, salt, baking soda, fruit, ginger, and peel in a large bowl stir, then make a well in the centre
  • Pour buttermilk into a jug and add honey and golden syrup
  • Stir the liquid well and pour into the centre of the bowl. Make sure to leave a little for glazing. Mix with your hands until springy. Then turn on to a floured board and pat with both hands into a round shape
  • Pre heat oven, gas 4, 350f 180 c
  • Glaze the top with your left over buttermilk mixture and sprinkle with chopped nuts and sugar. Place on a greased baking tray and pop into the oven for about 20-25 minutes
  • Keep checking the bread after 15 minutes of cooking. When it’s ready the bread will change colour and sound hollow when you tap the bottom

A lot of people tie a ribbon around the Samhain bread. We didn’t have any when we made this bread but I think next time I will use purple as it is used for wisdom, insight and inspiration
