Strawberry Scones

We have taken part in the #TwitterBakeAlong  for the past couple of weeks, and.  this week Jess wanted to make some strawberry scones. She needed a bit of help but managed to do most of it herself.

This is a recipe that I’ve had stored for a while that contains cream in the mixture which I wasn’t sure about but it worked surprisingly well.

Ingredients:

  • 300g Plain Four
  • 55g Granulated Sugar
  • 1 Tbsp Baking Powder
  • 1/4  tsp Salt
  •  115g Unsalted Butter
  • 160g Diced Strawberries
  •  Eggs (beaten)
  • 8 Tbsps Double Cream
  • 1 Tbsp Milk – for the top
  •  Sugar – for the top

Method:

Preheat oven, gas mark 6 or 200C. Mix together the four, sugar, baking powder & salt in a large bowl. Add the butter (diced) and cut it into the flour. Mix until it resembles pea sized breadcrumbs. Mix in the chopped strawberries.

In another bowl mix the beaten eggs with the cream. Once mixed add to flour mixture. Using a large spoon gently stir until combined but not not over nix.

Place dough onto a well floured surface and shape into a circle around 3/4″ thick and cut into 12 even (did you see this Jess, EVEN) pieces.  Leave space between each piece when cooking. We actually cooked them in 2 lots as they spread.

Brush the tops with milk and sprinkle sugar over them. Bake for around 15-17 minutes until golden brown.

For my second time doing something on my own  (the first thing being  flapjack )it is  quite good but the strawberry is a bit powering  but it still tastes good even Abbie said it was ok  and it takes a lot to impress her.
