Cheesy Pasta with Spinach & Bacon

Bacon is one of our ‘go to’ ingredients when we are looking for something quick to make. We are trying a lot more dishes without meat these days but bacon is amongst the hardest thing to cut out of our diet.

Spinach is something we tend to use a lot more these days. It has so many vitamins, antioxidants and minerals, and even my husband will eat it raw 🙂

This was a quick lunch for us which used up some things in the fridge.

 

Ingredients:

  • ½ lb pasta
  • 2 tbsp olive oil
  • 2 tbsp all purpose flour
  • 200 ml  milk
  • 1 tsp dried basil
  • ½ tsp black pepper
  • ¼ tsp rosemary
  • ½ tsp garlic puree
  • 60g cream cheese
  • Salt to taste
  • 60 ml hot water or use the pasta water
  • 2 large handfuls spinach leaves, chopped
  • 3 rashers bacon cooked and chopped

Method:

Cook the pasta as normal and reserve around 60 ml of the water, if using instead of plain water later.  Add around half of the olive oil to the pasta once drained to hep prevent it sticking.

Cook the bacon and leave to the side to cool then chop.

Heat the rest of the olive oil is a frying pan or skillet and add the herbs and garlic puree. After a minute add the flour and stir until combined and starting to brown, then add the milk stirring all the time. Once it starts to thicken add the cream cheese and stir until smooth.  Season to taste.

Cool for a minute and then add the spinach and pasta and mix until the pasta is coated with the cheese mix. Finally add the bacon to the to and serve.
