Sweet & Sour Pork Stir Fry with Rice Noodles

FODMAP friendly sweet & sour porkA slight twist on the sweet & sour that Abbie made the other week. While looking for more things I could eat as part of the FODMAP diet I found some rice noodles in the supermarket so fitted them into a meal for myself.

Quick and easy to make, perfect for cooking with the children.  This recipe serves 1

Sorry the photo is very dark, it did look nicer.

Ingredients:

2 Pork Steaks (diced)

100g Rice Noodles

100g Water Chestnuts

100g Bamboo Shoots

50g Bean Sprouts

Soy Sauce

 

Method:

  • Heat a small amount of oil in a wok or large frying pan, add the diced pork
  • Fry for 3 or 4 minutes until cooked
  • Add the rice noodles, vegetables & soy sauce to taste and cook for a further 4-5 minutes then serve

I used canned vegetables and there was enough to make the same meal again the day after or you could simply use them all and it will serve 2 people.
