Bacon and Cheese Roly-Polys

This is another thing that was made for my birthday buffet, by far the nicest of the lot. They were the only things to be completely eaten, not one left!

 

You will need:

For the filling:

  • 8 Bacon rashes
  • 1 Onion, finely chopped
  • 100g Soft cheese
  • 100g Cheddar, grated
  • 2tsp Parsley
  • 1tsp Garlic puree

For the pastry:

  • 250g Plain flour
  • 3 tsp Baking powder
  • 80g Butter, chilled
  • 1/2 tsp Salt
  • 150-200ml Milk
  • 20g Butter, melted 

Method:

1. Mix in the flour, baking powder, salt and butter with your fingertips. Then add in the milk and mix until just combined and forms a dough.

2. Roll out the pastry on floured surface to a rectangle about 1-1.5cm thick , trim the end the edges if you want to, brush with the melted butter. Place the bacon on the buttered pastry leaving about 2cm at one side.

3. Mix together the onion, soft cheese, cheddar, parsley and garlic puree and spread over the top of the bacon with your fingers as to not move the bacon or the pastry. On 2 cm that you left before, dab a little bit of cold water on that to make it a bit sticky, and then start rolling it up from the opposite end.

4. Once you have rolled it up, brush the seam with a bit of water to make it sure it sticks together. Then wrap the whole roll in clingfilm and refrigerate for 20-30< minutes. Preheat the oven to gas mark 4/180°C/350°F. Line a baking tray with grease-proof paper.

5. After you get it out of the fridge, unwrap it but leave it on the clingfilm. With a sharp knife, carefully cut into slices of about 2cm or so. Place each slice on the baking tray, spiral side up and bake for 25-30 minutes or until the pastry is golden brown. Done!
