Christmas Chocolate Pudding

If you don’t like fruity or Boozy Christmas pudding, here’s an alternative. A surprisingly easy recipe to follow. Although I wouldn’t recommend more than a sixth of the pudding per person, and even that I struggled slightly. Tip: Electric hand mixer might help (I got one for Christmas and wanted to show off with it).

Chocolate Christmas Pudding
An Alternative Fruit Puddings

You will need:

For the pudding:

  • 135g plain flour
  • 30g cocoa powder (I actually ran out of cocoa powder making this so I used hot chocolate powder instead)
  • 135g caster sugar
  • 135g butter
  • 45g plain yogurt
  • 3 eggs
  • 1 1/2 tsp baking powder
  • 1 Big-ish pinch of Bicarbonate of soda

For the sauce aka: the best part:

  • 160g milk chocolate
  • 165ml double cream
  • 55g golden syrup

1. Mix together ALL the ingredients for the pudding in a bowl. Put all the mixture into a VERY well-buttered Medium-sized Pudding bowl (the mixture should be an inch and a half off the top). Wrap the pudding bowl VERY  tightly in in foil, multiple layers if necessary.

2. Fill a pan (that has a fitting lid) with cold water so that it goes to about halfway up the pudding bowl (take the pudding bowl out after measuring) , bring to the boil. Lower the heat, place the pudding in the pan and cover with the lid. Steam for 2 1/4 hours checking the water level every 20-30 minutes to make sure there’s enough water. Boil some water in a kettle  and top it up whenever its running low.

3. When there’s about 10 minutes left to go for the pudding start the chocolate sauce, put all the ingredients into a small milk pan. Put on a medium heat and stir until chocolate has melted. Whisk to combine.

4. Turn off the heat to the Pudding and EXTREMELY CAREFULLY take the pudding out of the pan (you cant let it cool down first). I used an oven glove on one hand and a silicone glove on the other, I looked like I was going to war.

5. If you buttered it enough it should come out as soon as it’s tipped over onto a plate, but If it;s like mine then just go around the sides with a rounded knife. Pour over the chocolate sauce and you’re done!!!
